We’re partnering with a celebrated London restaurant group known for its pioneering farming partnerships and World’s 50 Best accolades. They seek a Head of Butchery to oversee operations across five sites, ensuring exceptional quality, team development, and sustainable practices.
The Role:
Lead and mentor a butchery team across multiple high-profile restaurantsManage supplier relationships, sourcing, and inventory with a focus on sustainabilityDrive menu collaboration with Head Chefs, optimizing cuts and yieldsEnsure compliance with health/safety standards and waste reductionThe Ideal Candidate:
5+ years’ butchery experience, ideally in hospitalityExpert in meat breakdown, aging, and ethical sourcingProven leadership skills with a passion for team developmentOrganized, communicative, and committed to sustainabilityWhy Apply?
